Banana bread is my all time FAVE! But it needs to be sorry for the word but moist on the inside not dry and crumbly. This GF banana muffin recipe is a nutrient dense tasty choice for you and your mini’s. I like to know exactly what is in the foods I’m giving my mini’s, this one is packed with natural sugars, protein and good fats from the almond meal, and loads of vitamins from bananas. It’s a great snack to pack with you when your out or travelling. Get your mini involved making muffins and dad on clean up duties!

PREP: 10 MINS
COOK: 35 MINS
INGREDIENTS
1 cup plain GF flour
3/4 cup almond meal
1 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
1/2 cup melted coconut oil
2 TBSP honey
1/4 cup almond milk – here is my Almond Milk recipe.
2 eggs
1 tsp vanilla bean paste
2 big mashed ripe bananas
METHOD
Mix dry ingredients together in a bowl.
in a separate bowl mix all remaining / wet ingredients together.
Combine wet into dry and stir until mixed through.
Pour mixture into muffin trays. I use a 6 regular muffin tray and a 12 mini muffin tray.
Bake on 180.
Cook mini muffins for 20MINS + Mamma muffins for 25MINS.
Set aside for 10MINS then enjoy!
